Well Done Pudding
Vanilla Pudding garnished with ground cashew nuts & sliced peaches.
Serves: 4-5
Ingredients

10 eggs
·
4 glasses milk
·
10 cashew nuts
·
1/3 tsp vanilla essence
·
1 glass sugar
Directions
Making the caramel
1.
Heat 4 tablespoons of sugar in a dry pan. Do
not touch or stir the sugar; let it melt and turn a light brown.
2.
Add 4 tablespoons of water to the sugar
syrup. The mixture will start to bubble. Swirl the pan to heat it evenly. Do
not stir.
3.
Once the mixture turns a golden brown, pour
the caramelized sugar into a buttered, ovenproof glass bowl.
Making the vanilla pudding

Whisk the eggs until they are fluffy. Add the
sugar and beat until the sugar is completely dissolved.
5.
Bring the milk to a boil. Remove it from the
heat and allow it to cool for a few minutes. Add the milk to the egg and sugar
mixture and beat for a few minutes.
6.
Add the vanilla essence and give it a quick
stir. Pour the mixture through a strainer to remove any undissolved egg white
strands.
7.
Pour the mixture over the caramel.
8.
Cover the bowl with a lid or aluminum foil.
Place the bowl into a steamer or pressure cooker. Steam for 10-12 minutes. Turn
off the heat and let the pudding sit in the steamer for an additional 5
minutes.
9.
Allow the pudding to cool to room
temperature.
10. To
serve, run a knife around the sides of the bowl. Place a serving plate over the
bowl and carefully flip it over. Slowly pull the bowl up.
11. Garnish
with ground cashew nuts and sliced peaches.
12. The pudding can be refrigerated overnight and served the next day.
