A delicious Kerala rice flour halwa / sweet with coconut milk. Popular among Latin Christians, Portuguese influenced.
Ingredients3 cups raw rice
1 kg brown unrefined sugar (jaggery)
2 coconuts – extract milk, 1st & 2nd
Cardamom powder
Ghee or coconut oil
Fried, chopped cashew nut
Method:
Dry grind rice to powder.
Mix together with coconut milk.
Melt brown sugar. Strain, cool and add to the
rice flour batter.
In a thick bottom pan or wok, add a little ghee & heat.
Add the batter to it. When it begins to boil, lower the fire. Keep stirring at very low heat till it gradually thickens. Add in a little ghee now and then. Cook till oil separates
When it is ready it should not be sticky to the touch and should leave the sides of the pot and you should be able to form a single dough. Add cardamom powder and fried cashew nuts. Mix.
In a flat oven proof dish (stainless steel plate) place some ghee & flatten the mixture in it.
Put wax paper on top.
Bake for approximately 40 mins at 170 degree (350 degrees F)
When ready it produces a distinct odor. On being pricked it will not stick to the fork.
