Shepherd's Pie
Indian Style
Ingredients
For the Filling
500 grams ground beef, pork or mutton
2 large onions
4 cloves garlic
¼ in piece Ginger
Salt
Pepper
Tomato sauce
½ cup grated carrots
½ cup grated
½ cup peas
½ cup celery
½ teaspoon garam masala
½ teaspoon jeera powder
1 tsp turmeric
small
bunch coriander, roughly chopped
juice
of 1 lemon
for
the mash
3-4 large potatoes, peeled and chopped
1 egg yolk, beaten
2 tsp butter
1 tbsp parmesan + extra to top (optional but it'll really lift the dish)

1/2 cup milk
Method
In a skillet add oil, onions, garlic and ginger & cook
till light brown. Add vegetables till 1/2 done. Add ground meat, tomato sauce
& all the spices. Add lime juice & chopped cilantro. Cook for 3-4
minutes. Keep aside.
Boil the potatoes, whole, in a pan in boiling, salted water until tender
- about 15-20 minutes. Drain well and carefully skin the potatoes. Mash well
with a potato masher and set the potatoes aside.
Preheat the oven to 180C/gas
Heat the butter and milk in a pan until hot, season well with salt and freshly ground
black pepper and stir in the reserved mashed potatoes. Stir lightly and quickly
to incorporate, then taste and adjust the seasoning with more salt and pepper,
if necessary. Remove from the heat.
Grease an ovenproof dish with butter. Add the ground,seasoned meat.
Add the egg yolk, butter and parmesan to the mashed potato.
Top with the mashed potato and another sprinkling of parmesan. Fork
through (important, to get the crispy edges!), and dot with butter.
Bake at 350 degrees Fahrenheit for 20-25 min, or till golden.
