Grape Wine

Ingredients

Grapes (purple) – 1 kg
Green grapes - 3 ½ kgs
Sugar 4 ½ kg
Boiling water 2 gallons ( 7.5 L)

Method

Wash grapes. Put in a large bowl & crush them with your hands or wooden spoon or potato masher. Take care not to break the pips (fruit seed). Pour 2 gallons of boiling water over the juice. Put into jars &leave for 10 days. Cover tightly in air-tight jars. After 10 days strain off the liquid into another jar. Add 4 ½ kgs sugar. Stir well. Cover the jar & leave for 14 days. Stir well everyday. When it stops bubbling, & no sizzling noise can be heard bottle. Push corks in tight. Leave for 6 months or more. Inspect ocassionaly. Add more sugar if required – depends on the ripeness of the fruit.
